Ingredients:
- 2 rolled pie crusts from the refrigerated section of the grocery store
- 5 cups frozen mixed berries (raspberries, blueberries, strawberries and blackberries are best)
- ½ cup granulated white sugar
- ½ cup dark brown sugar
- 2 teaspoons orange zest
- ¼ teaspoons kosher or Himalayan salt
- ¼ cup fresh squeezed orange juice
- ¼ cup corn starch
- 4 tablespoons room temperature butter
- Preheat the oven to 475°F.
- Remove pie crusts from refrigerator and allow them to come to room temperature.
- Mix the berries, sugars, orange juice, orange zest and salt in a small saucepan. Simmer mixture on medium until sugar is dissolved and berries are soft and warmed through. Turn off heat and allow the mixture to cool slightly.
- Spray a pie pan lightly with cooking spray or lightly brush with melted butter. This will make serving the pie easier.
- Unroll one pie crust and gently place in the pie pan. Gently press the pie crust into the pie pan, making sure that the crust is in contact with the pan at all points. Be sure there are no air bubbles or tears.
- Blend the corn starch well into the berry mixture, making sure it is evenly distributed and dissolved into the mixture.
- Gently pour the berries mix into the pie pan.
- Unroll the second pie crust and gently place it over the pie pan. Seal the edges to the two crusts tightly. Rolling the bottom crust up and over the top crust, then crimping with your fingers or a fork will give the pie an extra homemade look and make it easier to serve.
- Gently score the top crust using a design of your choice. A design with an "X" and a few slashes between the X will allow good venting and give your pie a unique design.
- Bake for 15 minutes at 475°, then lower the temperature for 350°.
- Bake for an additional 30-40 minutes, until crust is golden brown and berries are bubbling through the venting design.
Allow the pie to cool completely before serving.
Reheating:
To rewarm, cover with aluminum foil and place in the oven at 250° for 10-15 minutes.
